Why you should be vegan according to vegans

The book is well researched and straightforward to read. If you are considering veganism and are partial to arguments concerning the suffering of animals, I would highly recommend this book. With a primary focus on factory farming, it covers a range of topics from the ethical treatment of animals, to environmental impacts, to fair trade. Arguments were generally well written, but sometimes fallacious (although not necessarily unsound) and often appealed to animal suffering even in claims that did not call for it. I was disappointed that it did not cover more ethical qualms about the types of plant based foods we produce and consume; focusing mostly on reasons to avoid animal products. The concluding sections were quite good, particularly on not being fanatical about veganism and resources linked.

For quite some time I had been concerned about the effects of my eating habits, however I had been overwhelmed with all of the information and options that were out there. I had many questions: Are all animals wrong to eat? Is there anything wrong with milk and eggs? What does cage free, humane certified really mean? What are the reasons (other than health claims) for going organic?

This book blends philosophical arguments, thoroughly researched evidence, and hands on experience to provide excellent insight into these questions.

Wait! What am I eating?

A powerfully written discussion about food production, food choices, and the importance of consciously considering how our food is grown, treated, and delivered. Singer's opening line: "We don't usually think of what we eat as a matter of ethics" (p. 3). Gulp. He's right, I was, still am sometimes, an unconscious purchaser and consumer. I was convicted after reading this book to be more conscious, more educated, more deliberate in understanding what I'm eating, where and how it was grown, and the practices surrounding it. This is the power of this book! It's a tough commitment to live up to. Admittedly, there are days when I fail miserably (sigh). But I'm no longer unconscious and this is a start.

Singer's device of using three families with three differing approaches (Standard American Diet; conscientious Omnivores, and The Vegans) was useful in illustrating a continuum of choices and awareness but also in illustrating the challenges of each, and the difficulties we have in making wise, informed food choices. The power of Singer's book is in the way he presents the complexity of decision making (for example - buy local but if their food practices are unethical, is it wise to buy local?!) - these are not two dimensional easy choices, even when trying to pull the thread - it can be difficult to ascertain practices of food producers, and then there's the practical - at the end of a long work day, I just want to get supper on the table.

While reading I felt as though Singer was trying to present information in a conversational way to get me to thinking, to raise awareness - the balance between information, questions, and sympathy with the challenges of ethical decision making when we perhaps don't have all the facts, it's not black and white, etc. was really helpful in being able to digest and consider the material (i.e., I didn't feel preached at and like a loser because I don't always know or consider...smile).

Between 1749 and 1850—the formative years of the so-called Jewish Question in Germany—the emancipation debates over granting full civil and political rights to Jews provided the topical background against which all representations of Jewish characters and concerns in literary texts were read. Helfer focuses sharply on these debates and demonstrates through close readings of works by Gotthold Lessing, Friedrich Schiller, Achim von Arnim, Annette von Droste- Hülshoff, Adalbert Stifter, and Franz Grillparzer how disciplinary practices within the field of German studies have led to systematic blind spots in the scholarship on anti-Semitism to date. 

While all the authors discussed are well known and justly celebrated, the particular works addressed represent an effective mix of enduring classics and less recognized, indeed often scandalously overlooked, texts whose consideration leads to a reevaluation of the author’s more mainstream oeuvre. Although some of the works and authors chosen have previously been noted for their anti-Semitic proclivities, the majority have not, and some have even been marked by German scholarship as philo-Semitic—a view that The Word Unheard undertakes not so much to refute as to complicate, and in the process to question not only these texts but also the deafness of the German scholarly tradition. With implications that reach into many disciplines, The Word Unheard will be a foundational study for all scholars of modern Germany.

In this challenging and broadly convincing book, Martha B. Helfer
investigates anti-Semitism, not among the usual suspects, but in a range
of mostly canonical eighteenth- and nineteenth-century texts by Lessing,
Schiller, Arnim, Droste-Hülshoff, Stifter and Grillparzer, where animus
against Jews is mostly latent and has to be uncovered by close reading.
Even the great philosemite Lessing, whose conscious good intentions Helfer
does not impugn, reveals unconscious ambivalence, not only in Die
Erziehung des Menschengeschlechts but even in Die Juden and Nathan der

A real tour-de-force!

This book offers a provocative interrogation of the workings of literary anti-Semitism for which there is really no parallel in the existing literature--in English or German. Helfer opens her book with a substantial introduction that reflects in methodological and theoretical terms on what is at stake in reading for latent anti-Semitism in canonical works of German literature in the way she does. The book is well structured and beautifully written, without a single lapse into unnecessary scholarly jargon, and marks an important contribution to both German and German-Jewish Studies. The Word Unheard is a major study, one that should be required reading for students and scholars of German Studies and Jewish Studies alike.

WARNING: THIS IS BOOK IS TRASH! IT'S FOR ANTI-GERMAN JEWS ONLY. HANG ON, SNOOPIE! SCHIZOIDAL ZIONIST GIRL HAS GONE WILD, WILD, WILD!,

The state of academia is in terrible decline in the U.S.A. This book is just another instance for the prosecution. It's written in deconstructionist scribble-scrabble. The entire Introduction is devoted to merely sounding like someone who knows what she's writing about but who makes sure she talks out of both sides of her mouth so she can't ever be wrong, though she also cannot ever be clear or plain in her meaning to her readers either.

The writing contains a lift-off, levitating quality that only works if you ignore sense and logic, as do all of Jacques Derrida's works work this technique as well. This text, however, is dumbed-down Derrida. It is not nearly so convoluted as his writing. Thank God for small favors, eh?

Not only does the author contradict herself in almost every paragraph she writes, she never defines what she means -- ever. The most blatant example is how the author literally and openly refuses to define "anti-Semitism." Of course, she refuses, because it's a non-conceptual, fuzzy word, yet it's even used in the subtitle of her work: "Legacies of Anti-Semitism in German Literature and Culture." Ridiculous! You're not allowed to shout "Fire!" in a crowded movie theater, but you're allowed to fling the label "anti-Semitism" in a book written by a deconstructionist specialist who doesn't have to define her terms according to "the method." Ridiculous!

Here's a passage which fully illustrates the Lewis Carroll-like nonsense the author is fond of spewing throughout the entire work, this from page 21 on Gotthold Lessing. (It's actually kind of unintentionally funny, in part, too):

". . . I do not believe that either Lessing or his writings should be characterized as anti-Semitic. In comparison to the unambiguous anti-Semitism elsewhere in Enlightenment letters -- Kant's call for the euthanasia of Judaism, Voltaire's attack on the Jews as a barbarous, contemptible people who nonetheless should not be burned, or Fichte's proposal to decapitate the Jews and replace their Jewish heads with Christian ones, to cite but a few famous examples -- Lessing clearly intends to promote a pro-Jewish Enlightenment tolerance agenda. It is also the case, I believe, that we simply cannot read Lessing's writings on Jews and Judaism as they were read in the eighteenth century. Our post-Holocaust eyes perforce read the anti-Jewish moments in these texts more critically . . . . Still, these anti-Jewish moments in Lessing's writings must be read, and not simply read over or excused away as not existing. This is precisely the point of the three close readings I have offered here: to demonstrate a structural homology that must be accounted for in any study of `Lessing and the Jews.' At the limits of his Enlightenment discourse, Lessing's pro-Jewish writings turn back on themselves programmatically and self-critically. Where Lessing intentionally wrote this critique into his texts -- as I have proposed -- ultimately is a matter of little consequence. Intentional or not, the anti-Jewish moments in these texts constitute an important juncture in the history of the formation of the rhetoric of anti-Semitism."

A rational reader just wants to scream: "Give me a freakin' break! 'Anti-Jewish moments' are an important "juncture" in the history of the formation of the rhetoric of anti-Semitism," particularly when no one knows what anti-Semitism is and such a concept never existed in the 19th century? Jobberwocky talk!!!

The author authoritatively states if a Jew can smell anti-Semitism anywhere in a text, it is, in fact, anti-Semitism, even when it's not anti-Semitism. That much was made plain. And if a text offends a Jew, it is thereby offensive and objectionable even when the text is not anti-Semitic. I think I remember reading something from nonsensical from Gertrude Stein once that went, "I judge judge." Well, so does Martha Helfer, too. She helps herself to judgment of others whenever she cares to. That's right, too, no? Ridiculous!

Or in the words of the Scottish Orpheus, Donovan: "First, there is no mountain, then there is no mountain, then there is."

Ridiculous!

There's also something insidiously creepy about a book in which the author is actively snooping -- spying - inside a past century and culture in order to find traces of real hatred for a race in a time and in a culture that was not ever known or expected to be "Jew-friendly" and who keeps insisting on blaming the individuals involved for their "anti-Semitism" when that culture was uniquely homogeneous, as Israel is today or as Japan is, but few nations now are, thanks to Israel-led immigration policies all over the Western world.

This whole work is all so laughably ridiculous. Find something else to read, and avoid this garbage-seeking garbage -- unless you like a Zionist version of Lewis Carroll's work, "Adventures Through the Spying Glass."

A New Perspective on Anti-Semitism

The argument of this book is bold, original, and deceptively simple: Between 1750 and 1850, during a time of constant political debate about the place of Jews in German and Austrian society, German-language writers developed a new literary anti-Semitism that has been largely ignored by scholars. In a series of close readings, Helfer shows how canonical authors such as Friedrich Schiller, Achim von Arnim, Annette von Droste-Hülshoff, and Franz Grillparzer create their Jewish characters from stock images of anti-Semitism. Even more importantly--and surprisingly--Helfer argues that they are very much aware of their doings, aware that "the Jew" is a discursive construct, a creation of their own writing. Helfer's provocative thesis is that the authors' self-reflexivity abets anti-Semitism rather than exposes or critiques it. The book is lucidly written and its argument compelling.

Cooperation is powerful.

There aren't many highly cooperative species--but they nearly cover the planet. Ants alone account for a quarter of all animal matter. Yet the human capacity to work together leaves every other species standing.

We organize ourselves into communities of hundreds of millions of individuals, inhabit every continent, and send people into space. Human beings are nature's greatest team players. And the truly astounding thing is, we only started our steep climb to the top of the rankings--overtaking wasps, bees, termites and ants--in the last 10,000 years. Genetic evolution can't explain this anomaly. Something else is going on. How did we become the ultrasocial animal?

In his latest book, the evolutionary scientist Peter Turchin (War and Peace and War) solves the puzzle using some astonishing results in the new science of Cultural Evolution. The story of humanity, from the first scattered bands of Homo sapiens right through to the greatest empires in history, turns out to be driven by a remorseless logic. Peter Turchin is Professor of Evolutionary Biology at the University of Connecticut, Research Associate in the School of Anthropology, University of Oxford, and Vice-President of the Evolution Institute. Disappointed

Regret that I could not rate this book higher b/c I like and admire Turchin’s approach to history (mathematical modeling) which aims at objectivity and balance. This work seems to be not quite balanced or nuanced as his earlier War, Peace and War. The thesis seems to be almost entirely premised on the idea that social inequality, a current hot topic, destroys cooperation. That explains too much without providing sufficient evidence. Exploitation (almost) always infers inequality but inequality which is everywhere does not automatically infer exploitation. That bears exploration in depth which is missing. First the good stuff. Turchin writes in clear, lucid prose unlike the turgid obfuscating prose of his colleagues. And he does not spend a lot of time boring readers with endless criticisms of other authors, but see below. The book traces human violence and warfare with interesting historical examples. He claims that the hunter-gatherer societies were egalitarian compared to animals (apes) or later human societies but provides no evidence, which is not surprising. I certainly cannot claim otherwise but sketchy evidence from studies of primitive people in the 20th century suggest that male dominance operated on the only available resources i.e. access to choice females and food. Archeological burial evidence of societies prior to large scale farming suggests that material goods (weapons mainly) were highly prized and signaled inequality. More thorough discussion would be useful. Turchin errs in a point by point criticism of Pinker’s explanation for declining violence (The Better Angels of Our Nature) .Pinker (wisely) explicitly places little importance on the explanations but rather offers some possible reasons. Turchin tellingly criticises Pinker’s “muddle of reasons” for the decline of violence, but it is exactly that the independent (muddled) contributions are more plausible than the single reason (inequality) offered by Turchin. That is something he, as a person trained in mathematics should know instinctively. Turchin misses an opportunity to clearly explain the only equation (Price) in the book, probably because he is so accustomed to maths. By rephrasing the wording and comparing the dot product would make the equation more intuitive to readers not familiar. Prof. Turchin says he is working on a continuing book. I hope he spends more time and offers a more complete analysis next time. Rereading what I wrote, it sounds too negative but I am too lazy to start again. In sum I recommend the book as interesting; I am not in a position to offer alternate theories.

Powerful new perspective on how culture evolves

This is an accessible overview of a powerful new way of understanding History - all of it, for every culture. The models Turchin describes are explanatory, not just descriptive, and are testable, not just anecdotal.

For me, the most powerful concepts in this book is the interaction between cooperation and competition, within groups and between groups. Unlike other social theories which attempt to use evolution, this theory can explain why altruism and cooperation have increased as civilization has advanced. This is not a side effect, or an accident - it is the consequence of competition between groups, and the essence of civilization. This theory is much more useful, and consistent with experience than 'selfish genes' or the 'greed is good' theories which have dominated political discourse for the past half-century.

The book can seem a little disjointed at times, as the author tries to keep the many threads tied together. It is a wonderful overview, and a fairly quick read - definitely makes you think

Important, ambitious, fun, insightful, empowering... just read it!

Read this masterwork! Fellow lovers of big history, cultural evolution, whit & science--this book was written for us! Full disclosure: I work with this book's author, Peter Turchin. When I learned that he was writing a new book, I asked him for pre-publication copy and he kindly sent one along, no strings attached. Now, I can smugly say, 'I read Ultrasociety before it was cool' :) Here is my honest review, warts and all.

'Ultrasociety' tackles a huge range of topics. It doesn't seek to tell us what happened in world history, but why historical happenings (e.g., the fall of the Roman Empire) make sense given what we know about how and why humans cooperate and compete in groups. In other words, 'Ultrasociety' tells us not only how history went down, but why these things happened in the first place. It explains just as much as it tells. When I turned the last page, I felt empowered. I had acquired a number of tools for understanding world history in general, not the kind of historical trivia that I might use at dinner parties to show my friends how smart I am ('You think your rent is sky high, let me tell you what poor families in imperial Rome's insulae had to put up with!') For example, instead of detailing the decline and fall of the Roman Empire (as so many scholars have done), 'Ultrasociety' takes a scientific approach to create a general theory of empires, answering questions like 'Why did humans create empires in the first place?' and 'How do empires around the world and throughout history stick together and why do they crumble so dramatically?' If you want a detailed account of a particular time or place, look elsewhere. This book hurdles through human history with an olympic pace.

'Ultrasociety' tackles big questions with big history using a common language and everyday examples. As a result, this book is both authoritative and accessible/fun, a difficult balancing act. Sometimes Peter doesn't get the balance quite right. He sometimes lacks nuance as he gallops on a mounted archer through his historical accounts. In chapters 9 and 10, for example, he uncritically adopts the central premise of Ara Norenzayan’s Big Gods: How Religion Transformed Cooperation and Conflict. Recent research by Atkinson, Latham, and Watts (2014) tells us that the jury is still out about whether the observed increases in individual prosocial behavior brought about by powerful/moralizing/punishing gods produce actual cooperative advantages at the societal level. Thus, Peter is vulnerable to same criticism that he makes of Steven Pinker's The Better Angels of Our Nature: Why Violence Has Declined in chapter 10 when he says, 'Pinker does mention the changes changes in our cultural environment, but his emphasis is on how this environment molds the psychology of individuals'. Perhaps in favor of Peter's Axial-thesis is that Atkinson et al point to comparative evidence that the gods of Abrahamic religions--with their universalizing ideology, proselytization, and codified moral norms with a one-god exclusivity clause--appear to confer cooperative advantages, but we don't have good comparative data on non-Abrahamic religions/gods or societies that have not been hugely affected by Abrahamic religions/gods. Peter needs more historical data to refine his theory and argument here. Undoubtedly, historians will find other areas in need of refinement as well. Luckily, Peter is leading the charge in the collection of just the sort of historical data necessary to test and refine our theories of history and cultural evolution.

Like any proper scientist, being 'right' isn't Peter's goal. He wants to expand our knowledge by marshalling more data to test key predictions. As he points out in the final chapter, 'Vulnerability to being rejected is of course a virtue, as far as scientific theories are concerned.' He should be applauded for putting his ideas and predictions into plain language, allowing them to be scrutinized, criticized, and refined by others. Ultimately, Peter seeks to transform what we know about human societies into a science. If we can developed a science of cultural evolution, he argues, then we can learn how to cure our social ills. Count me among those persuaded.

Important, ambitious, fun, insightful, empowering... just read it!

I received my copy of the Cookie Companion at 10:30 and I had already baked two of the recipes by 5:00. One of the advantages of this great book--no trips to the store for exotic ingredients. Anyone who is a frequent baker already has everything needed on a shelf in the pantry.

If you live at altitude, page 22 alone is worth the price of the book. Photocopy it and tape it at your baking prep area.

The chapter division in the Companion is very baker friendly. How many times do you say, "I think I want to bake a drop/bar/cutout cookie" and how many times do you just think, "I would like an oatmeal cookie." Go to the chapter for the flavor or main ingredient of what you are in the mood to bake (or have the ingredients for). You will be sure to find a cookie that interests you.

I really liked the wide range of choices offered by the multiple recipes for the old standards. Do you want an oatmeal cookie that is soft, chewey, crisp, etc. You can select a recipe that meets your needs and wants for the moment.

The recipe headers are fun to read. The descriptions are sometimes amusing and it seems that the author is being very friendly and honest...almost like a friend handing you a recipe with his or her opinion of the results to be achieved.

I enjoyed the wonderful illustrations. It is obvious that the artist is quite familiar with baking techniques. The art really enhanced my appreciation of the recipes and the book.

Step by step and easy to follow--trademarks of baking with King Arthur recipes. These could be used by a beginning baker as well as by more experienced cooks. The sidebars contain interesting tips on ingrediets or techniques.

The only negative I have is the touting of some of the more exotic kitchen equipment (which can be purchased from King Arthur's Baker's Catalogue) in the comprehensive equipment listing. But I also read every issue of the catalogue when it arrives, so it is a very minor point.

Best General Purpose Cookie Cookbook So Far

`The King Arthur Flour Cookie Companion' by King Arthur staff bakers and recipe testers, with a major assist from Laura Brody and the usual platoon of editors and designers from W. W. Norton and The Courtryman Press of Woodstock, Vermont is certainly the very best general purpose cookie book I have reviewed to date. I say this with the important caveat that I have yet to review major cookie books by baking heavyweights Nick Malgieri, Maida Heatter, and Carol Walter.

It is important to say that the value of the book is not based on its exhaustive coverage of cookie recipes, although in over 500 pages, the book certainly covers all but a few corners of the far flung land of cookie baking. While it does leave out some important recipes, such as the famous thin Moravian ginger cookies of North Carolina, its real value is in its meticulous description of all those factors that influence great cookie baking.

While a lot of cookie baking is a lot more forgiving than, say, pastry or biscuits or cheesecake, it is still baking, which means that a change in ingredients which would mean nothing to a sautee or a braise will mean the difference between a great cookie and a disappointment. The clearest example of this sensitivity is in the selection of shortening, where the major choices are butter, lard, margarine, or vegetable shortenings such as Crisco. Each option has a significant effect on taste and the degree that a drop cookie will rise or spread. And, that's before you even take nutritional aspects into account with tradeoffs between the saturated fats of butter and the transfats of margarine. Add in the effects of different sugars and different flours and you start to wonder how a cookie ever manages to get made. Oddly enough, the most complicated ingredient, the egg, seems to be the least finicky. All you do is be sure you use large eggs and bring them to room temperature before mixing them into other ingredients.

The fact is, as long as you are good at following directions, you have in this book a terrific collection of recipes for an incredibly modest list price of less than $30 which I am virtually certain will work for you every time. I repeat, this assumes you follow directions and don't do any substituting unless you really know what you are doing.

A perfect example of how this book can improve your cookie baking is the case of my favorite Snickerdoodle recipe from Nancy Baggett's `The All American Cookie Book'. I have been quite pleased with my results from this recipe ever since it became my standard, except that I would like them to spread out a bit less. Nancy's recipe calls for all butter and I happen to be using White Lily flour, which is relatively low in protein (a great pie crust flour, to be sure). It turns out that butter, low protein flour, and high sugar content all contribute to spreading, not to mention dropping the cookie dough onto a warm sheet. And here I thought it was all due to the corn syrup in Nancy's recipe.

My most interesting items in this book are where the authors disagree with statements in super baker Rose Levy Beranbaum's Christmas Cookie book. One is where King Arthur warns against using oil sprays containing lecithin (an emulsifier found in eggs) while Ms. Beranbaum recommends them. Also, King Arthur warns that while you can rework leftovers from cookie cutout margins, the cutouts from reworked dough will be a bit tougher than the originals. Miss Rose suggests there is no problem with reworking cookie dough. Last, Beranbaum warns against using sheets with high edges (such as jellyroll pans) to bake cookies, as this will inhibit cookie browning. King Arthur gives no such warning and recommends jellyroll pans along with no sided or low sided cookie sheets. On these issues, I give King Author two out of three, as I believe I have seen Rose's adverse effect of high-sided pans on cookie baking.

After the exquisitely presented discussion of what makes cookies work, the best feature of this book is its organization of recipes by type, with all of the most important styles grouped into a chapter of `The Essentials'. These are your chocolate chip cookies, sugar cookies, oatmeal cookies, molasses cookies, peanut butter cookies, shortbread, Biscotti, brownies, and decorated cookies. While I suspect the book dedicated to chocolate chip cookies may do a better job of it, I have seen no better treatment of chocolate chip cookies than what you get here. Also, in the chapter on decorated cookies you get all the basics you need to make gingerbread houses. Ms. Beranbaum's Christmas Cookies book gives a much more elaborate presentation of the subject, but this is more than enough to get you started. The remaining cookie types, each with their own chapter are bars and squares (hermits); drop cookies (thumbprint cookies); roll-out cookies (classic spice cookies and cutouts); shaped cookies (molded cookies such as springerles); batter cookies (such as Madeleines); and no-bake cookies (rum balls).

The low price and the terrific coverage of all basic cookie types make this by far one of the best general-purpose cookie books. There are others which are very, very good and there are special subject books such as Beranbaum's Christmas cookie book which offer things not in this volume, but you simply cannot go wrong if you get this book and follow its advice carefully.

I thing this is a better cookie book than King Arthur's earlier `All Purpose Baking Book'. Very highly recommended.

The best for non-professional baking

I am a professionally trained home baker and own over 250 baking books. I also have a set of 16 binders I made for various products and projects while in baking school in the early 2000s along with a ring set of master formulas and a laminated 'cheat sheet'so I can bake any product, anywhere. In fact, I am in the process of writing my own book for like-minded home bakers incorporating many of the tricks and techniques I learned in the fabulous States-side Cordon Bleu-based program I attended (a two year curriculum - now that's thorough!).

So, I didn't need this book, but I was looking for a cookie book to give as a gift for my daughter -- who is a scientist and bakes on the fly -- that would present the standard variety (and hopefully more) in an accurate and easy to follow manner. None of the books I had on my own shelves fit all my criteria, so I did a little exploring on Amazon and found this one. I liked what I read enough to buy a copy for myself, first and have now given it as a gift to many people. I am very happy with it.

Once you know the ratios for each baking product [after all, the same four basic ingredients make up 95% of all baking: flour (base), water/liquid ('reagent'), eggs (leavening), butter/oil (fat)] what matters are the details and particulates added along with the proportions. In culinary school students memorize these ratios so they know the difference between a pancake and a crepe, a biscuit and a muffin. The trained eye can also recognize incorrect 'recipes' and wrong proportions that mean many bookstore baking books are useless and lead to failed projects (this is not a problem in Europe where formulas are considered sacred and product names reflect a standardized version of any baked product - almost as controlled as wines and cheeses! It is more of a dilemma here in the US where anyone can publish a book and call him or herself an expert - thus the dizzying and confusing array of baking books on the market here and their cumbersome size. Recipe books in Europe are concise - a small picture, a bullet list of ingredients, a short paragraph of instruction, since most people know what goes into making a classic croissant, for example and don't need or want every author to repeat it). For that reason, when I peruse baking books, I skip the measurements and instructions and instead merely look for interesting flavors, particulates, embellishments, i.e., the creative and imaginative input of other minds. For the accurate formula for any product, I turn to professional resources.

Now, having said all of that - back to the King Arthur Flour Cookie Companion. This is a great start for home bakers who want accuracy and a thorough range of standard US cookies without being burdened with too much technical information or formulas (recipes) that take too long to prepare. Most people do not have any time to waste. For a professional version of this kind of baking, turn to Wayne Gisslen's two introductory culinary textbooks (baking and cooking) - they are well worth the investment. Short of Gisslen, this book fits the needs of any home baker.

I am particularly impressed by the amount of professional instruction and explanation that they have managed to include without its interfering with getting the project done. There are simply shaded sidebars throughout that give the kind of tips that elevate the amateur product to the professional and commercial level. For example, using Fiori di Sicilia - standard in commercial kitchens, the principle of docking, without which many products will simply fail (pizza principal among them!) and dough relaxers, among others of this genre.

As for the issue that someone raised about the book failing to discuss proper ingredient temperatures, I believe this was done within the descriptions and explanations of the individual products - perhaps not emphasized as much as would be ideal, but again, too much technical information can be offputting to people who are not meticulous. The important thing is to have formulas that work even when today's hurried home bakers are a bit careless. This book provides those kinds of recipes. But, for example, the concept of eggs brought to room temperature is dealt with on page 485. Softened butter is discussed on page 484. Some cookies doughs need to be chilled and that is addressed throughout the book. Cold butter and cold eggs can be a problem when incorporating hot liquids or other hot ingredients but for the most part these are not serious issues when making cookies (in contrast, cold ingredients are key to a successful pie dough, for example).
Do not expect spectacular imagination and decoration from this basic, accurate, how-to instruction reference. You can find all of that in thousands of ordinary cookie books, online, most of them through Amazon. I still buy them from time to time, myself, to stimulate my own creativity.

There are a handful of professional baking books that the serious baker should have (Amendola, Gisslen, etc.). I keep them in one spot on my cookbook shelves. The rest of my baking books are just for their imaginative details - they are inspirational but little more. The reason baking seems daunting is that it is grounded in math, chemistry and biology. The challenge of all that is they are a bit difficult to master at first, but the reward is, once understood and properly employed, a correct knowledge of baking science will mean perfect outcomes, every single time and the ability to make one or a thousand items with rather simple equipment and tools, anywhere you land.

If I had to throw away all my famous-name, home baking cookie books and keep just one, it would be King Arthur's.
